TUNA BURGERS
As we are in the season of Lent, I thought I might as well come up with some
fishy stories. Well, here’s one tale that can be very versatile as a “sud-an”,
as an in-between buns, or as little balls for “pica-pica”. Just don’t forget all
you huggables out there, that we have had a lot of fishy tales in the past
months. Now, in this Lenten season, is the time to review your notes and start
concocting up those fishy stories.
2 large cans Century Tuna Flakes in Oil (drained and flaked more finely)
2 medium red onions (minced finely)
2 stalks celery (minced finely)
1/3 cup fine bread crumbs and ¼ cup flour
¼ cup milk and 2 eggs ; salt & pepper
Cooking oil
PROCEDURE:
1.) Except for the oil, combine together all the ingredients in a large bowl.
Mix well and form into burger patties or small balls. Set aside.
2.) Heat up your “sarten” and pour in your cooking oil. Fry each piece until
LIGHT brown only. Drain in paper towels.
TIPS:
- Leftover fish is also a good substitute for the canned tuna.
- Remember that the tuna is already cooked. So, do not fry too long. You just
want to bind all the ingredients with a little frying.
- You can also wrap in “apa” as to make “lumpia”, and then fry it also.
- Serve with your favorite tomatoe ketchup, banana ketchup, sweet & chili sauce
and “atchara”. Should you serve it in-between buns, serve with your usual
favorite condiments as for any burger sandwich.
