FANCY BABY POTATOES

This is a nice recipe that you may impress your family and friends.   But it’s so easy to prepare and you can do it ahead of time.   Just keep it covered and tucked away while you are chatting with them. It tastes superb and high end, pero indi gid!


1 kilo baby potatoes
1/3 stick of butter (room temperature)
3 teaspoons chives (finely sliced)
1 Tablespoon Italian seasoning
Salt & pepper (to taste)

PROCEDURE:
1.)    Wash thoroughly baby potatoes with skin on. Peel off middle portion ONLY, creating a ring around each potatoe.
2.)    In a steamer, heat up water. When boiling starts, arrange potatoes on upper deck.   Steam until potatoes are soft, about 15 minutes.
3.)    While potatoes are steaming, mix butter, dried herbs, chives, salt and pepper together.
4.)    When potatoes are done, transfer to a bowl and incorporate herbed butter mixture.

TIPS:
- Steaming the baby potatoes will keep them from getting soggy. Do not boil!
- Try any died herbs of your fancy.
- Use a rubber scraper (spatula) when mixing, so that you avoid tearing or wounding the potatoes.
- A great change from the usual mashed potatoes or French fries, as a side dish.
- Serve along side of steaks, roasts or grilled dishes.
