Three Bean Mexican Pot

Definitely three times the gaseous potency, as this stew uses three kinds of legumes (beans)! Just have your Kremil-S or Tums served at the end of the meal. It does help relieve the tension from within. And if you get the snub, believe me, this stew is worth it!!!

Three Bean Mexican Pot
1 kilo skinless/boneless pork (chop coarsely, DO NOT grind)
1 regular can whole tomatoes (coarsely cut)
1 can red kidney beans (do not drain)
1 can white beans (do not drain)
1 can garbanzos (do not drain)
1 tsp cumin
1 tbsp. chili powder
½ tsp cayenne pepper
1 Knorr pork cubes
2 large laurel leaves
1/3 cup cooking oil
1 heaping Tbsp. tomato paste
2 red onions (chopped)
1 head garlic (macerated)
Salt and Black pepper

Procedure:
1. Heat up cooking oil in a “casserole”. Sauté garlic and onions. Throw in your pork meat, Knorr cubes, cumin, chili powder, cayenne and laurel leaves. Let it sweat and simmer covered.

2. After 5 minutes, add your cut up tomatoes and all the 3 kinds of beans with their juices. Cover again and simmer over low heat. Please stir occasionally. Simmer for at least 15 minutes.

3. Add your tomato paste, and season with salt and black pepper. If mixture is too thick, just add a little water to your desired consistency. Turn off heat after another 15 minutes.

Tips:
-Just add more of the cayenne pepper or red pepper flakes if you desire a spicier concoction.
-Serve with crackers, tortilla chips or make “samo” with rice! Also good with Gardenia corn muffins.
